Skewer
According to the definition in the dictionary the Skewer is “a pointed iron rod in which meat, fish and other foods are put on to roast over a fire”. Its meaning, however, is commonly extended to indicate the set of foods so skewered and roasted. The SKEWER is, therefore, a mixture of meats of different sizes that are threaded and composed in the skewers (iron rods where the spit is cooked) , interspersed with lard and aromatic herbs, cooked through the reverberation of the flame for 5/6 hours. The meat mainly used is pork and chicken, but also poultry and poultry. Elected in 2010 as a certified traditional product, the skewer is part of the cuisine of the Piedmont area and can be found in the menus of the numerous agriturismos scattered throughout the territory.
